About the Author

Anna Thomas wrote The Vegetarian Epicure in 1973, which transformed the landscape of American cooking. She is also the author of the James Beard Award–winning cookbook Love Soup, and, most recently, Vegan, Vegetarian, Omnivore. She lives in Los Angeles and Ojai, California.

My sister and I have, due to old age, acquired some dietary restrictions that have caused us to try to cook and eat more at home. Due to some recent cold weather, we got on a soup kick. After having gone through every recipe I had in my possession, I googled Vegetarian Soup on the Amazon app and here was this lovely, James Beard award-winning cookbook that was everything I hoped it would be.There are 160 vegetarian and vegan recipes which are incidentally healthy. It's not a health cookbook, it's a cookbook full of the most delicious soups you will ever eat in your life, that just happen to also be good for you.I've only had it for a few weeks, we haven't yet made a good dent in it, but I can tell you the Old-Fashioned Split-Pea Soup, and the Tomato, Fennel and Blood Orange, are so spectacular, that they have made our grocery list weekly. We can't seem to eat enough of it. I made a double batch of the tomato one week ago thinking it would last, but we ate it just as quickly.It's also a budget saver, which is also coincidental. Even when the recipes call for something a little unusual or exotic, it is still well within our means. (We are fortunate to live near a Central Market and a Whole Foods, so we have access to items like sorrel and celery root; don't let that deter you. 95% of the ingredients needed in order to complete these recipes has been available at our neighborhood Kroger, and most soups employ common, everyday, widely-available ingredients). Once you have the basic staples (we weren't cooking, so we didn't have a lot of stuff) you are largely just purchasing veggies, which aren't actually, as it turns out, too expensive. Or not nearly as expensive as I thought. This week, for example, we only spent $52, for two people, for one week. I spent $26 for one week's worth of groceries. Before, I was spending around $84 just for me, mainly for frozen meals, and that didn't even include what I was spending on dinners out. My sister, because of her job, didn't have time to cook. She had just enough energy left at the end of the day to crawl into a booth at a restaurant, order, eat and pay before driving home and passing out. Most meals out were averaging about $35 per meal for dinner alone, (factoring in the tip.) Soups can be assembled relatively quickly, and simmer along slowly without you while you read a book, saving some time.Before we found this book, we were broke at the end of every month, sick all the time, and concerned that our clothes were getting too tight.But now at the end of every month, we have money left over to put into savings, and our clothes, which were tight, are getting so loose, that we might soon need to take some of this extra cash and go shopping, which is a fun problem to have :)So if you are looking for a book that will delight your tastebuds, boost your health, help you discover foods you've never tried before, fatten your wallet, and trim your waistline, this is it.I cannot say enough positive things about this book. Anna Thomas is an interesting, culinary genius. Her character/personality shines through the pages. My grandmother is 89.5; The story which accompanied the Pickle Soup recipe touched my heart. (Soup is about the only thing we can get her excited about these days, too.) There were times when I would be reading, where I wished Anna Thomas was somebody I knew in real life. She's a pretty awesome, interesting lady.If you're thinking about this book, and you are reading my review, I hope you decide to go ahead and grab it, and I hope you love it as much as I do.I own both a physical and digital copy. The physical book is gorgeous, and the digital copy has no glitches or grammar type issues.

This is a very nice book for veggie soup. I find the combination of ingredients something I never though of and I am not sure about some of them. However there are a lot of familiar soups as well along with some interesting other things including deserts. I have been looking for a good gingerbread recipe and the one in the book looks good and I cannot wait to try it. All in all, I can see why this is an award winning book. The only thing missing are pictures of the finished dishes which is something I always like, and gave it 4 stars for the omission.

Anna Thomas is a great cook. I have used and enjoyed the food cooked from her two first books, Vegetarian Epicure I and VE II.In all the years I've cooked from them, no meat-eaters have ever remarked upon the absence of meat. It tastes so good, people don't really pay attention to that. (I'm an omnivore myself.)I've given several copies of this book as gifts and been privileged to sample the results. Again, excellent food. I'm excited to see there is a new update to Vegetarian Epicure with a view to lighter fare. I'm not convinced it can be that much more healthy because when food is fabulous, I think your body appreciates it so much that whatever richness may be in the recipes can cause very little damage.

This cookbook belongs in the kitchen of everyone who has ever savored a homemade soup or sought out the comfort of a meal within a warm bowl of deliciousness. That this is a vegetarian book is really beside the point. You will learn how to combine ordinary vegetables for outstanding results, oh, so simply.Now for some truth telling. I was a vegetarian when I bought this book, and it carried me through some difficult times of trying to plan interesting, tasty meals. Now I have become a vegan and find it easy to adapt the recipes with all the savory goodness intact.

Once you've made your very own veggie broth from this book, you will never be satisfied with store bought again! It's delicious and easy to make. The first couple times I made broth, it seemed like a lot of work. Several batches later I've gotten into the rhythm of it & it's lots easier. Though I'd continue to make it just because it's so delicious! And her green soups are a revelation! The green soups are what originally attracted me to this book. The green soups are yummy as are most all her other recipes. It's a delicious adventure. It's a great book to share!
